Watercress or yellowcress is a species of aquatic flowering plant, and one of the oldest known leaf vegetables consumed by humans. Watercress and many of its relatives, such as garden cress, mustard, radish, and wasabi, are noteworthy for their piquant flavors.

Watercress stems are hollow and float in water. Small, white, and green flowers are produced in clusters.

Watercress is grown in many temperate locations worldwide. Cultivation is practical on both large and small garden scale. Being semi-aquatic, watercress is well-suited to hydroponic cultivation, thriving best in water that is slightly alkaline. In many local markets, the demand for hydroponically grown watercress exceeds supply, partly because cress leaves are unsuitable for distribution in dried form and can be stored fresh for only 2–3 days.

In some regions, watercress is regarded as a weed, in other regions as an aquatic vegetable or herb. When introduced into non-native environments watercress can have negative impacts on native species. To be cautious, these plants should only be grown in closed water systems, away from natural watercourses.
